Apple Almond Quinoa Salad with Maple Tahini Dressing

I found a new blog that I am in love with: thesimpleveganista.blogspot.ca

While I’m not vegan, I absolutely love her recipe list. This is a great website to look for recipe ideas for “Meatless Mondays” or if you just want to reduce the amount of meat you are eating.

Of course, I made a few modifications to her recipe.  Nothing taste-altering.  Also, I calculated the nutritional value of the quinoa salad (and the dressing separately, in case you wanted to use it for another recipe).

I love tahini, but it is very high in calories and fat, so just remember to use it in moderation.

Great Recipe for Meal Planning

This recipe is a great 5-day work week pack and go lunch, as it makes 5 servings. If you are planning to make it for lunch, I recommend leaving the dressing off until you are ready to have your salad. I portioned 2 tbsp of the dressing into 5 dressing containers to use at the time of my meal. You can mix the dressing into the quinoa, but the dressing soaked into the quinoa and made the salad a bit dry.

Apple & Almond Quinoa Salad with Maple Tahini Dressing

Description

Overnight oats basic recipe.


Ingredients

Scale
  • 1 cup Quinoa Grain
  • 2 cup Water
  • 1 tbsp Lemon Juice
  • 1 large Apple, cored and diced
  • 1 cup Celery, thinly sliced
  • 1/4 cup Cranberries
  • 30 almonds Almond, Dry Roasted, Unblanched, Chopped
  • 1 large Red Pepper, Sweet, Raw, diced
  • 1/2 tsp Cinnamon, Ground
  • 3 tbsp Hemp Hearts
  • 1.00 servings SWEET TAHINI DRESSING
  • 5 cup Sweet Kale Vegetable Salad mix

Instructions

  1. Rinse your quinoa in a fine mesh sieve. In a medium size pot, add water and quinoa, bring to a boil.
  2. Cover, reduce heat and simmer for 15 minutes. Remove cover and let set 15 minutes, fluff with a fork.
  3. While quinoa is cooking, prepare your dressing by combining ingredients in a small bowl (I used my magic bullet).
  4. Mix well and set aside to let the flavors relax into each other. It should be thin enough to drizzle.
  5. (see Sweet Tahini Dressing Recipe below).
  6. Core and dice apples, top with lemon juice and toss gently (You can do this right on the cutting board to not dirty up another bowl).
  7. Prepare the remaining ingredients. Add the apples, celery, cranberries, almonds, and cinnamon to the quinoa, mix well.
  8. Taste for flavor adding more cinnamon if you like.
  9. Mix the sweet tahini dressing in to the salad. Serve on its own, or on 1 cup of Sweet Kale Vegetable Salad mix.

Notes

  • This recipe is just a template…feel free to sub in unsweetened cranberries for the raisins (I use raisins because they contain no added sugars and I can find organic ones easily).
  • Opt to leave the celery or grapes out using just apples (or use any combo you like). Add in a grated carrot for more color. Add more cinnamon if you like. Try using pecans instead of almonds. Try serving with some leafy greens.
  • Have fun playing around with this making it your own.
  • Store at room temperature if eating within a few hours or store in the refrigerator until ready.
  • This recipe makes 5 cups and a bit (about 1/2 cup left over) of the Quinoa salad.

Maple Tahini Dressing

Ingredients

Scale
  • 1/3 cup Sesame Butter, Tahini, From Roasted & Toasted Kernels
  • 1/4 cup Water
  • 2 tbsp Syrup, Maple
  • 1/2 tsp Vinegar, Cider

Instructions

  1. Combine ingredients in a small bowl.
  2. Mix well and set aside to let the flavors relax into each other.
  3. Add more water, 1 teaspoon at a time, to thin as needed.
  4. To thicken add more tahini. It should be thin enough to drizzle.
  5. Dressing serves four.

As mentioned in the recipe, you can eat this salad alone or serve it on top of lettuce.

I’ve been pairing this recipe with the  Eat Smart Sweet Kale salad  Kale and Cabbage mix from Costco.
