With all the craziness going on, I decided to try making some apple pie energy bites to get me through the day. It is so easy to keep plugging away at the day and skip a meal…I totally get it! However, I try to practice what I preach, and skipping meals leads to the mid-afternoon BRAIN drain and will likely lead you to eat more than you really need at your next meal. 

I was given a sample box of Solo Energy bars, and up until now, they were my go-to quick fix between meals or as a meal replacement when I just didn’t prepare properly for the week. They taste great, and I found they kept me feeling full without a post-energy crash. However, I’ve always wanted to make my own energy bars or snacks, so now that the Solo Bars are gone, I came up with a recipe that I find is a great substitute (when you have time to make them).

I also decided to try and tie this post into a Recipe Redux post. This month, the theme was Pies. So I decided to make a bit of a twist on the traditional “Pie” and make Apple Pie Energy Bites.

Apple Pie Energy Bites

Description

You got to try these super easy apple pie energy bites.  They’re perfect for a quick snack on the go.


Ingredients

Scale
  • 2 cup large flake oats cooks in 4-5 mins, dry 
  • 1 cup natural peanut butter 
  • 12 cup applesauce unsweetened 1 medium apple grated 
  • 1 tsp vanilla extract 
  • 12 tsp cinnamon ground
  • 2 tbsp maple syrup 100%

Instructions

  • Place all ingredients into a food processor.
  • Pluse until ingredients combined.
  • Using a tablespoon, spoon out dough, and roll it into 24 balls. Place in the fridge for 30 mins to set.
  • Prep Time: 10
  • Cook Time: 30
