Make friends with your slow cooker and have dinner ready before you get home from work!

I have another great guest post by the lovely Katie Henderson and Emily Fentie of @alittlefreshflavour! They are true experts on how to get dinner done in a flash. They have created this amazing “Slow Cooker Zuppa Toscana Soup” recipe for our blog today!

Lately the slow cooker has been our best friend, and here’s why; coming home after a long day to a house that smells amazing, like your very own personal chef has been cooking for you all day—it’s the best! The soup we are sharing with you today is a spicy Italian dish that warms you from the inside out, it’s packed with some colorful veggies too. There is little prep for this soup, it is mostly throw everything in the crockpot and come back 4-8 hours later for a bowl (or two)!

We decided to experiment with some purple sweet potato in this one, and so happy that we did! It gave the soup a stunning purple colour. There’s many ways to alter this recipe to fit your tastes. If you aren’t someone that is big on spice choose a mild sausage meat or swap for your favourite ground meat. Serve this soup with some crusty bread or just on its own, enjoy!

Slow Cooker Zuppa Toscana Soup

An instant hit after a long day of work!


Ingredients

Scale
  • 188 g Spicy Italian Sausage Meat
  • 2 Sweet Potatoes, sliced
  • 1 bunch Kale, chopped
  • 8 cups Chicken Broth, No Salt Added
  • 1.5 tsp Paprika
  • 0.5 tsp Anise Seed
  • 1 tsp Black Pepper
  • 1 tsp Garlic Powder
  • 1 can White Beans, rinsed
  • 1 cup Cream

Instructions

  1. Slice the sweet potatoes and chop the kale
  2. Add sweet potatoes, kale, Italian sausage meat, chicken broth and spices into the slow cooker. Note: if you are using dried beans add them in this step.
  3. Cook on LOW for 8 hours, or HIGH for 3.5-4 hours
  4. Stir in white beans and cream
  5. Serve with your favourite crusty roll!
