Apple Pecan Baked Oatmeal

Description

This Apple Pecan Baked Oatmeal is an yummy grab and go breakfast.


Ingredients

Scale
  • 3 cups of quick cooking oats
  • 3/4 cups of brown sugar
  • 2 tsp baking powder
  • 1 tsp of cinnamon
  • 2 eggs
  • 1 1/2 cup milk or almond milk
  • 1/2 cup of canola oil or vegetable oil
  • 1/2 tsp vanilla extract
  • 1 large granny smith apple. Chop into small pieces.
  • 1/4 cup chopped pecans

Instructions

  1. Preheat oven to 350 degrees F.
  2. Line a 9 x 9 inch baking dish with parchment paper or spray with non stick spray. Set aside.
  3. In a large bowl, add the oats, brown sugar, baking powder, & cinnamon.
  4. In another bowl. Whisk eggs slightly. Add milk, oil & vanilla.
  5. Add liquid mixture to oat mixture and combine.
  6. Add apple pieces and mix
  7. Scope mixture into prepared dish and spread out evenly
  8. Top with chopped pecans
  9. Bake for 40-45 minutes or until set
