Chocolate Oat Energy Bites 

Oh so chocolaty!  These amazing chocolate oat energy bites are perfect for a quick kid-friendly snack or breakfast! They’re no-bake, gluten-free and vegan.

Like most moms of school-age children, I often find it difficult to find nut-free snacks, especially healthy snacks.

You can also use sun butter (made with sunflower seeds) that you can substitute for peanut butter in most recipes. I usually make it myself in my Vitamix, but you could use a food processor as well. 
 
I have seen it at my local Bulk Barn, which is super handy because you can buy just what you need for a recipe.  
 

In this recipe, sun butter makes an excellent replacement for peanut butter.

Amazing Kid-Friendly Chocolate Oat Energy Bite


Ingredients

Scale
  • 1 cup (dry) oatmeal (I used old-fashioned oats, although use gluten-free oats if making this GF)
  • 2/3 cup unsweetened coconut flakes
  • 1/2 cup peanut butter or sunbutter
  • 1/2 cup ground flax seed
  • 1/3 cup maple syrup
  • 1/4 cup unsweetened cocoa powder
  • 1 tablespoon chia seeds
  • 1 tablespoon hemp hearts
  • 1 teaspoon vanilla extract

Instructions

  1. Stir all ingredients together in a medium bowl until thoroughly mixed.
  2. Cover and chill in the refrigerator for at least half an hour, to make the mix easier to handle and mold.
  3. Once chilled, roll into balls of whatever size you would like. (Mine were about 1″ in diameter.) Store in an airtight container and keep refrigerated for up to 1 week.
  4. Makes about 20-25 balls.

Notes

  • Add extra oats if too wet.
