One-Pot Pasta e Fagioli is a hearty and delicious Italian soup that is perfect for a winter day. This dish is made with a variety of vegetables, beans, and pasta, all cooked in a single pot. All you need is one pot for this satisfying, stress-free meal! Life is hectic. Meal prep doesn’t have to be. One pot meals are flexible and forgiving. You can adapt as you go along, and there aren’t a lot of culinary rules to follow. In this recipe, I swapped out the white pasta for whole wheat pasta, and used canned low-sodium tomatoes versus fresh.

One-Pot Pasta e Fagioli

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, finely chopped
  • 4 stalk celery, chopped
  • 3 carrot, peeled and chopped
  • 1 tablespoon dried basil
  • 1 tablespoon dried oregano
  • Dash of red pepper flakes
  • 1 can (796ml) chopped whole tomatoes, with juices
  • 6 cups low-sodium chicken stock, or vegetable stock
  • 1 can white beans, or mixed beans, drained and rinsed
  • 2 cup whole wheat pasta (dry)
  • 2 tablespoons fresh chopped parsley
  • Freshly grated Parmesan and black pepper for garnish

Instructions

  1. In a large heavy pot, heat olive oil over medium high heat.
  2. Stir in onion and cook for 2 minutes.
  3. Stir in garlic, celery, and carrots and cook for 3 minutes.
  4. Add dried basil, oregano, and red pepper flakes and toss to coat.
  5. Stir in tomatoes and stock and bring to a boil.
  6. Reduce heat and simmer for 20 minutes.
  7. If necessary add an additional cup of stock or water and stir in beans and pasta.
  8. Simmer for 6-8 minutes or until pasta is tender. Stir in parsley and serve hot with grated Parmesan and ground black pepper.
