Start with A Rotisserie Chicken Spice Blend Recipe

You can easily make a spice blend rub by mixing garlic powder, dried thyme, ground pepper, and poultry seasoning in equal amounts. Crave some spicy flavor? Toss in some cayenne too!

However, if you like the following recipes, we have one here for you. This aromatic and flavorful spice blend will take your rotisserie chicken to the next level. Use it as a dry rub or mix it with olive oil to create a delicious marinade.

Rotisserie Chicken Spice Blend Recipe

Ingredients:

  • 2 tbsp paprika
  • 2 tbsp garlic powder
  • 2 tbsp onion powder
  • 1 tbsp dried thyme
  • 1 tbsp dried oregano
  • 1 tbsp salt
  • 1 tsp black pepper
  • 1/2 tsp cayenne pepper (optional)

Instructions:

  1. In a small bowl, combine paprika, garlic powder, onion powder, thyme, oregano, salt, black pepper, and cayenne pepper (if using).
  2. Mix well to combine.
  3. Store in an airtight container until ready to use.

Choose your cooking method

Method 1: Spatchcock

Step 1: Gather Your Ingredients and Tools Before you start cooking, make sure you have all the necessary ingredients and tools. Here’s what you’ll need:

  • One whole chicken
  • Salt and pepper
  • Olive oil
  • Lemon (optional)
  • Roasting pan
  • Kitchen shears

Step 2: Preheat Your Oven: Preheat your oven to 425°F (218°C) to prepare for roasting the chicken.

Step 3: Remove the Backbone from the Chicken: Using kitchen shears, cut along both sides of the backbone to remove it entirely. Then, flip the chicken over to its breast side and press it down to flatten it out.

Step 4: Season the Chicken: Rub the chicken with olive oil and season it with the rub recipe above. If desired, squeeze a lemon over it for additional flavor.

Step 5: Roast the Chicken: Place the chicken in a roasting pan, breast side up. Roast the chicken for about 45-50 minutes or until the internal temperature reaches 165°F (74°C). Make sure to check the chicken halfway through cooking and baste it with any collected juices.

Step 6: Rest the Chicken: Once the chicken is done, remove it from the oven and let it rest for about 10 minutes before carving. This allows the juices to redistribute throughout the meat and ensures a moist, flavorful chicken.

Step 7: Carve and Serve: Using sharp knives or kitchen shears, carve the chicken into pieces and serve as desired. You can enjoy it as a main dish or use it in recipes that call for cooked chicken.

Method 2: Instant Pot

Cooking a whole chicken in the Instant Pot is incredibly convenient and easy. Here are the settings I like to use.

For Whole Chicken (Thawed):

  • Use the manual setting for 25 minutes
  • Quick release when done

For Whole Chicken (Frozen):

  • Use the manual setting for 40-50 minutes
  • Quick release when done

Step 1: Gather Your Ingredients and Tools: Here’s what you’ll need:

  • One whole chicken
  • Salt and pepper
  • Olive oil
  • Rotisserie spice blend recipe (above0
  • Instant Pot
  • Trivet

*A trivet is a raised steam rack that sits in the Instant Pot inner pot and serves to elevate foods above the cooking liquid. It helps prevent food from getting soggy or sticking to the bottom of the pot and allows steam to circulate evenly around the food for more efficient cooking.

Step 2: Prepare the Chicken: Remove the giblets and excess fat from the chicken cavity. Rinse the chicken inside and out, and pat dry with paper towels. Season the chicken both inside and out with salt, pepper, and any other desired spices like garlic.

Step 3: Preheat the Instant Pot: Turn on your Instant Pot and select the “Sauté” function. Add a tablespoon of olive oil and let it heat up for a minute.

Step 4: Brown the Chicken (Optional): Place the seasoned chicken in the Instant Pot and sear each side for about 2-3 minutes until golden brown. This step is optional but helps lock in the juices and adds extra flavor.

Step 5: Add Flavorings: If desired, add some chopped onions or garlic cloves around the chicken to enhance the flavor.

Step 6: Cook the Chicken: Place the trivet in the Instant Pot and place the chicken on top of it. Close the Instant Pot lid and make sure the valve is in the “Sealing” position. Set the Instant Pot to “Manual” or “Pressure Cook” mode and set the timer according to whether your chicken is thawed or frozen.

Step 7: Release Pressure and Rest: Once the timer goes off, let the pressure naturally release for 10-15 minutes. After this time has passed, use the Quick Release method to release any remaining pressure. Carefully remove the chicken from the Instant Pot and let it rest for 5-10 minutes before carving.
