This Black Bean Quinoa Salad is a quick and easy recipe I love making for lunches! Packed with fibre and protein and is a complete protein thanks to the quinoa. The salad is also full of veggies, making it highly nutritious. I love the texture of the quinoa, which has the texture of a grain but is actually a seed. The salad is also Delicious, thanks to the black beans and the dressing. This is a recipe I highly recommend!

This salad is full of healthy ingredients like quinoa, black beans, peppers, and onions, and it’s tossed in a simple homemade vinaigrette. Plus, it can be made ahead of time and stored in the fridge for a few days. To make the salad, start by cooking the quinoa according to the package instructions. Then, add the black beans, red pepper, red onions, and parsley to the cooked quinoa. For the dressing, finely mince a clove of garlic and add it to a bowl with whole grain Dijon mustard. Pour in the white wine vinegar or lemon juice, and season with kosher salt and black pepper. Whisk to combine all the ingredients, then slowly pour in olive oil while whisking to incorporate. Pour the dressing over the salad and toss to combine. Store in the fridge for a few days or enjoy immediately.

Ingredients

  • 1 cup quinoa, Cooked
  • 1.5 cup black beans, 1 can
  • 1/2 cup onion, raw, chopped
  • 1 large red bell pepper, chopped
  • 1 clove garlic, raw, chopped
  • 1 tsp Dijon mustard
  • 2 tbsp white wine vinegar
  • 1/4 tsp Windsor Half Salt TM
  • 1/4 tsp Pepper, Black, Ground
  • 5 tbsp olive oil
  • 2 tbsp feta cheese (per serving)

Instructions

  1. Place the quinoa in a large bowl and add the black beans, red pepper, red onions, and parsley.
  2. Dressing Instructions: Finely mince a clove of garlic in a bowl. Add whole grain Dijon mustard.Pour the white wine vinegar or lemon juice into mixture with kosher salt and black pepper. Whisk to combine all the ingredients. Slowly pour olive oil, whisking as you go to incorporate.
  3. Pour the homemade vinaigrette dressing over the quinoa salad and stir to combine.
  4. Garnish with feta cheese, parsley or fresh/dried herbs before serving. This salad is good served at room temperature or chilled.
