Start your morning on the right foot with these Oatmeal Banana Breakfast Muffins

Registered Dietitian Tracey Maynard and myself, Susan Watson were on Global TV Winnipeg morning news to talk about “How to prepare healthy lunches during the school year” and demonstrated some healthy meal ideas for kids. We whipped up a batch of these amazing muffins for the show!

If you don’t like to eat breakfast in the morning, maybe it is time to upgrade your morning meal. These oatmeal banana muffins are delicious and easy to make. You can batch cook them and freeze the leftovers a quick breakfast in the morning. 

I like to have a glass of milk or almond milk, a muffin and some apple slices to start my morning off with a balanced breakfast.

Oatmeal Banana Breakfast Muffins

Oatmeal Banana Breakfast Muffins

Ingredients

Scale
  • 2½ cups old fashioned oats
  • 1 cup plain low fat Greek yogurt
  • 2 eggs
  • ½ cup sugar
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 2 ripe bananas
  • 1 tsp vanilla

Instructions

  1. Preheat oven to 400F.
  2. Line your muffin pan with paper liners (or grease it so muffins don’t stick).
  3. Place all of the ingredients, including bananas in a blender or food processor, and blend until oats are smooth.
  4. Divide batter among cupcake liners, and bake for 15-20 minutes, or until toothpick comes out clean.

Notes

  • If you want to put in add ins such as chocolate chips, dried fruit, or nuts, add these after all ingredients have been blended
