Honey BBQ Glazed Meatballs ~ Great for big batch meal prep

Quick and easy-baked honey bbq glazed meatballs are a sweet and tangy filling meal that will leave you feeling great as they are baked and not fried! Make in large batches and freeze for fast make-ahead meals.

Honey BBQ Glazed Meatballs

Description

Sweet and Tangy, Baked Meatballs.


Ingredients

For the meatballs

  • 2 lb. lean ground turkey or 50/50mix with lean ground beef
  • 1 cup ground rolled outs
  • 2 eggs
  • ¼ cup green onions, chopped
  • ½ tsp. garlic powder
  • ½ tsp. salt
  • ½ tsp. black pepper

For the sauce

  • ¼ cup barbecue sauce
  • 3 Tbsp reduced-sodium soy sauce
  • 3 Tbsp rice vinegar
  • 3 Tbsp honey
  • 1 Tbsp grated fresh ginger
  • 3 cloves garlic, minced
  • ½ tsp. toasted sesame oil or canola oil

Instructions

  1. Preheat oven to 375 degrees F.
  2. In a large bowl, mix together turkey or 50/50 mix, ground oats, eggs, green onions, garlic powder and salt/pepper until well combined. Shape mixture into 1½­inch balls (you’ll make roughly 40 balls) and place spaced apart on prepared baking sheets lightly sprayed with cooking spray.Bake meatballs for 20 to 25 minutes, or until browned and cooked through.
  3. While the meatballs are baking, combine all the ingredients for the sauce in a small saucepan and bring to a boil over medium heat, whisking continuously. Reduce heat and simmer for 8 to 10 minutes (the sauce will start to thicken) then toss with the meatballs.
  4. Serve immediately over brown rice and top with green onions and a few sesame seeds. Enjoy!

Notes

  • These sweet and tangy meatballs also make a great healthy appetizer! Since they are baked and not fried you can feel good about eating them!

For the sauce: In a medium bowl, whisk together barbecue sauce, soy sauce, rice vinegar, honey, ginger, garlic and sesame oil or canola oil until smooth.

When meatballs are cooked through, transfer to a large bowl and pour sauce over top. Toss to coat evenly then serve warm with toothpicks for easy party eating! Enjoy!
