I have the perfect recipe for you. Try these low-carb breakfast muesli cookies. Breakfast cookies are the best way to start your day! That’s right, I said cookies, but unlike traditional cookies, these are packed with nutritional goodness that you and the kids will love.  These breakfast cookies are amazing and so easy to make that even the kids can help.

I often make a big batch and freeze the leftovers.  On busy mornings, I can easily grab one or two out of the freezer and by the time we are done getting dressed, they are defrosted and ready to eat.

They are perfect for those crazy mornings when you are running late but want to make sure your kids are full before they head out the door for school!

These cookies are not only vegan, gluten-free, and refined sugar-free but dairy free too!  Oh, and low carb.

Low Carb Breakfast Muesli Cookies

Description

A low carb breakfast muesli cookie that the kids will love


Ingredients

Scale
  • ½ cup ground flaxseed
  • 2 cups almond flour
  • ½ cup pumpkin seeds
  • ½ sunflower seeds
  • ½ cup dried cranberries
  • ½ cup canola oil or coconut oil (melted)
  • ½ cup coconut sugar or maple syrup
  • 1 teaspoon vanilla extract
  • a pinch of sea salt

Instructions

  1. Preheat oven to 150º.
  2. Combine linseed, almond meal, cranberries, pumpkin and sunflower seeds.
  3. Add coconut oil, coconut sugar, vanilla and salt.
  4. Mix through until combined.
  5. Divide dough into 20 balls and place onto a lined baking tray and flatten slightly.
  6. Bake for 30-35 mins until golden.
  7. Remove to a cooling rack and enjoy!
