Make the soup, simply sauté some onions and garlic in a large pot, then add the rest of the ingredients and allow the soup to simmer until everything is cooked through. You can squeeze fresh lemon juice to finish off the soup. Serve the soup immediately or freeze for later. One-Pot Quinoa Chickpea Spinach Soup

Description

A quick and delicious soup, all cooked in just 1 pot!


Ingredients

Scale
  • 1 tablespoon extra virgin olive oil
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • 3 carrots, finely chopped
  • 3 cups spinach, roughly chopped
  • 6 cups vegetable broth
  • 1 (796ml) can diced tomatoes
  • 2 sprigs fresh rosemary
  • 1 teaspoon dried thyme
  • 1/2 cup uncooked quinoa, rinsed
  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1 tbsp lemon juice

Instructions

  1. In a large pot, warm the olive oil over medium heat. Add the onion, sprinkle with salt & pepper, and cook for 3 minutes.
  2. Add the carrot and garlic, then continue to cook for about 2 minutes.
  3. To the pot, add the vegetable broth, diced tomatoes with their juices, thyme, rosemary and the quinoa. Bring to a low boil,
  4. cover and cook for about 15 minutes. Add the chickpeas and cook for 5 more minutes, until heated through.
  5. Stir in chopped spinach at the very end.
  6. Remove the sprig of rosemary then add lemon juice. Stir to combine. Serve warm and enjoy!
