Sheet Pan Chicken Fajitas with Homemade Seasoning

You might be wondering what is sheet pan cooking?  Simply, it’s using a sheet pan or baking pan to cook large batches of food.

I found this wonderful recipe from The Pinning Mama but, made a few of my own modifications.

This recipe tastes amazing and is really easy to make. I love that you can scale this recipe up or down depending on the number of people you are serving.  Also, you can batch cook this recipe, as it freezes well.

Start by making the fajita seasoning. I have included my recipe below.  Yes, you can purchase a package of this stuff, but the sodium is REALLY high in the store bought packages. My recipe is significantly cheaper too! This recipe makes enough for 2 meals.

Homemade Fajita Seasoning


  • Total Time: 5 minutes

Description

Ditch the sodium and make your own homemade fajita seasoning


Ingredients

Scale
  • 1 tbsp Chili Powder
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Onion Powder
  • 1/4 tsp Red Pepper flakes, crushed
  • 1 tsp Oregano. Dried
  • 1/2 tsp Paprika, Ground
  • 1 1/2 tsp Cumin, Ground
  • 1 tsp Black Pepper, Ground
  • 1/4 tsp Salt

Instructions

  1. In a small bowl, mix together chili powder, garlic powder, onion powder, red pepper flakes, oregano, paprika, cumin, and pepper.
  2. Store in an airtight container.

Once you have made your seasoning, you can get your chicken ready. I slice 5 chicken breasts in half, then sprinkled them with my fajita spice…about a 1tsp on each piece of meat.  Next, I add some onions, bell peppers and pop in the oven!

Sheet Pan Chicken Fajitas

Description

This recipe is not only the easiest but the fastest way to batch cook a large quantity of chicken fajitas.


Ingredients

Scale
  • 30 oz Chicken, Breast, Meat Only, Raw (5x 6 oz chicken breast cut in half)
  • 3 cup Green Pepper, Sweet, Raw (bell), Sliced
  • 1 medium Onion, Raw, Medium (sliced)
  • 2 tbsp Olive Oil
  • 1/2 cup Cheese, Lowfat Cheddar
  • 1/2 cup Cheese, Lowfat Mozzarella
  • 1 servings Fajita Seasoning

Instructions

  1. Trim the chicken breasts then lay them in a single layer in a glass baking dish.
  2. Sprinkle the fajita seasoning over the top of the chicken breast to taste.
  3. Lay your thinly sliced onions and peppers on top of the chicken breast, spread out evenly.
  4. Drizzle the olive oil over the peppers and onions.
  5. Sprinkle cheese over the top of the dish.
  6. Bake at 375 F for 35-45 minutes or until chicken is cooked though and the juices run clear.

Notes

Serve with one of the following options: whole grain tortilla, cooked brown rice, quinoa or spaghetti squash
